HABANERO PINEAPPLE HOT SAUCE PERFECTION.
A delicious condiment to pork and chicken this recipe has the perfect balance of flavor and the right amount of hot.
- 16 ounces/2 cups grilled pineapple. Fresh pineapple is best but caned will do.
- 2 Habanero Peppers whole. (A great way to store peppers is to freeze them whole in a zip lock bag)
- ½ onion (6 ounces)
- 1 carrot (3 ounces)
- ¼ cup golden raisins.
- 2-3 cloves of garlic depending on size (1 ounce)
- 1 lime with some zest.
- ½ ounce ginger
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ¼ teaspoon cinnamon
- 2 teaspoons sugar
- 2 teaspoons salt
- 1 ½ cups white vinegar.
- Optional - 2 jalapeno’s grilled
Place all the ingredients in blender and pulse until pureed. Add to sauté pan and simmer for 10 minutes. Fill hot sauce into sterilized bottles or jars. Place in hot water bath for 10 minutes. Let age for one week. Makes about four cups (1 quart). For super-hot add additional Habanero’s but his recipe does have a kick to it already.
